1. Basic Masala Tea Recipe:

Ingredients:
  • 8 pieces of dry ginger or three- fourth cup dry ginger powder
  • 3 whole nutmeg, ground
  • 20-30 pods, green cardamom
Method:
  1. If you are using dry ginger, then first grind that.
  2. After that, grind the nutmeg and cardamom. You can use the skin of the cardamom as well.
  3. This powder is your basic tea masala. Store in an airtight container.

2. Fresh Masala Tea:

Ingredients:
  • 1 cup water
  • 2-3 green cardamoms, smashed
  • 2-3 slices fresh ginger or smash 1 inch cube of ginger
  • 1 cinnamon stick
  • 1 star anise
  • 1 tablespoon loose tea
  • Half cup milk
  • Sugar or honey or jaggery to taste
Method:
  1. In a saucepan, mix the water and all the spice ingredients – ginger, cardamoms, cinnamon and star anise.
  2. Boil and simmer.
  3. Add milk and tea leaves and simmer again.
  4. Strain. Add sugar to taste.

3. The Spice House Masala Tea:

Ingredients:
  • 2 star anise
  • 1/2 tablespoon green cardamoms
  • 2 cloves
  • 2 pieces cinnamon bark
  • 1 teaspoon to 1 tablespoon black peppercorns
  • 2 dried bay leaves
Method:
  1. Grind the above ingredients into a fine powder.
  2. Add one or two teaspoons to a cup of water and boil.
  3. Add milk and honey or sugar according to taste.

4. Lemon Grass Tea Masala:

Ingredients:
  • A handful of dry lemongrass
  • 2 tablespoons ginger powder
  • 2 grated nutmegs
  • 15-20 cloves
  • 3-5 pieces cinnamon bark
  • 20-25 green cardamoms
  • 2 tablespoons fennel seeds
Method:
  1. Grind all of the above into a coarse powder.
  2. Store this powder in an airtight container.
  3. Add to boiling water and tea leaves to make your masala tea.
  4. Add milk and sugar as required.

5. Tulsi Blended Masala Tea:

Ingredients:
  • 2 tablespoons ginger powder
  • 2 grated nutmegs
  • 15-20 cloves
  • 3-5 pieces cinnamon bark
  • 20-25 green cardamoms
  • 2 tablespoons fennel seeds
  • 2 tablespoons dry Tulsi leaves
Method:
  1. All the above ingredients have to be ground into a powder.
  2. Add to boiling water according to taste.
  3. Add milk and sugar as required.

6. Exotic Tea Masala:

Ingredients:
  • Half cup dry Holy Basil
  • Half cup dry Rose Petals
  • Half cup ginger powder
  • 2 grated nutmegs
  • 15-20 cloves
  • 8-9 pieces cinnamon bark
  • 15-20 green cardamoms
  • 2 tablespoons fennel seeds
  • 1 tablespoon black pepper
Method:
The above has to be coarsely ground and used as tea masala.

7. Citrus Blend Masala Tea:

Ingredients:
  • Half cup dry Holy Basil
  • 1 tablespoon cloves
  • 5-6 pieces cinnamon stick
  • 2 tablespoons green cardamoms
  • 2 tablespoons fennel seeds
  • Half cup dried orange peels
Method:
  1. Mix the above ingredients well.
  2. Pulverize using a coffee grinder into a powder.
  3. Store in an airtight container. Use as required.

8. Saffron Infused Tea Masala:

Ingredients:
  • 2 tablespoons dry ginger powder
  • 2 tablespoons green cardamom powder
  • 1 tablespoon grated nutmeg
  • 1 1/2 tablespoons ground cloves
  • 1 1/2 tablespoon ground black pepper
  • 3 tablespoon ground cinnamon
  • 1/4 teaspoon saffron
Method:
  1. Mix all the above well and use as Tea Masala as per requirement.

Ingredients:
  • 1/4 cup small pieces of cinnamon
  • 1/8 cup cloves
  • 1/4 cup black peppercorns
  • 1/4 cup green cardamom
  • 6 black cardamoms
  • 1/4 cup of mace broken into pieces
  • 1/2 grated nutmeg
  • 1/4 cup dry ginger powder
Method:
  1. First dry roast the spices excluding mace, ginger and nutmeg.
  2. Let them cool.
  3. Add the balance ingredients and grind into a fine powder.
  4. After cooling store in an airtight container.

10. Punjabi Tea Masala:

Ingredients:
  • 1 cinnamon stick
  • 3 big black cardamoms
  • 10-12 green small cardamoms
  • 3-4 cloves
  • 1 ½ dried ginger, ginger powder
  • A pinch of Bishop’s weed (Ajwain seeds)
  • 5-6 black peppercorns
  • 1 tablespoon fennel seeds

  1. Dry roast all the above in a small saucepan till you get the aroma of the spices.
  2. Cool thoroughly.
  3. Blend in a coffee grinder into a powder like consistency.
  4. Cool and store in an airtight container.
