1. Whole Wheat Apple Chocó chip Muffins:


My mouth waters at the mere mentioning of this tasty sweet treat. Packed with the goodness of whole wheat, apples and choco chips, these muffins offer tempting treats for the kids.
Ingredients:
  • Washington Apples – 1
  • Whole wheat flour – ½ cup
  • Baking powder – ¼ tsp
  • Baking soda – ¼ tsp
  • Butter – ½ cup softened and 2 tsp for grease the molds
  • Brown sugar – ½ cup, finely powdered
  • Vanilla essence – 1 tsp
  • Choco chips – ¼ cup
  • Milk – 1 ½ tbsp
Directions:
  1. Preheat your oven to 200 degree Celsius.
  2. Grease a 9 hole muffin pan with butter and keep aside.
  3. Discard the peel of the apple, finely chop, and keep aside.
  4. Sieve whole wheat flour with baking powder and baking soda thrice and keep aside.
  5. In a large mixing bowl, add butter and powdered sugar.
  6. Using a hand mixer, on medium speed, beat the mixture until pale and fluffy.
  7. Add apples and vanilla and mix well.
  8. Add little flour and using a spoon, mix well.
  9. Add milk and mix gently.
  10. Divide among the greased molds.
  11. Sprinkle choco chips on the top.
  12. Place in the preheated oven and bake for 25 minutes or until a cake teaser inserted in the centre comes out clean.
  13. Remove from the oven and keep aside until warm.

I tried this recipe for my daughter’s birthday party. And you know what? There was not even a single piece left for me at the end for mere tasting. Ingredients:

  • Granny Smith Apples – 4
  • Semisweet chocolate – 16 oz
  • White chocolate – 8 oz
  • Bamboo skewers – 12 3-inch sticks
Directions:
  1. Wash the apples under running water and using a towel dry the apples thoroughly.
  2. Insert the skewers in the core of the apples.
  3. Add semisweet chocolate to a small bowl placed above a pot of boiling water and melt it.
  4. Dip the apples, one at a time, into the chocolate.
  5. Keep rolling so that the apples are evenly coated with the chocolate.
  6. Melt the white chocolate in a small bowl placed above a pot of boiling water.
  7. Drizzle it atop the chocolate coated apples, making swirls and patterns.
  8. Arrange in waxed papers and place in the refrigerator until the chocolate hardens.
  9. Serve cold.

Ingredients:

  • Apples – 2 cups, peeled, finely chopped, cooked
  • Butter – ½ cup
  • Sugar – 1 cup
  • All purpose flour – 1 cup
  • Baking powder – 2 tsp
  • Salt – a pinch
  • Milk – ¾ cup
  • Cinnamon – ¼ tsp [optional]
Directions:
  1. Preheat the oven to 180 degree Celsius.
  2. Melt butter in a 2 quart casserole and keep aside.
  3. In a mixing bowl, add flour, sugar, baking powder, salt, cinnamon [if using], and milk.
  4. Using a spoon, mix well into a batter.
  5. Transfer the batter to the casserole center.
  6. Drain apple slices and add to the batter in the middle.
  7. Bake in the preheated oven for 35 to 40 minutes or until the apples are drenched in the batter and crusts turn brown.

Ingredients:
For the crust:
  • Pie crusts – 2, refrigerated
For the filling:
  • Apples – 6 cups, peeled, thinly sliced
  • Sugar – 1 cup
  • All purpose flour – 2 tbsp
  • Cinnamon – ¾ tsp, freshly ground
  • Salt – ¼ tsp
  • Nutmeg – 1/8 tsp, freshly ground
  • Lemon juice – 1 tbsp, freshly squeezed
Directions:
  1. Preheat the oven to 215 degree Celsius.
  2. Follow the instructions mentioned on the package and soften the pie crusts.
  3. Take a 9 inch glass pie dish and arrange 1 curst in it, firmly pressing the edges and the bottom.
  4. In a mixing bowl, mix apples with the rest of the ingredients.
  5. Spoon in the mixture atop the pie crust.
  6. Cover with the second crust.
  7. Remove the excess crust and seal and flute the edges by firmly pressing using a finger.
  8. Using a plain, sharp knife, make slits atop the pie crust.

    • Butter – 10 tbsp, unsalted, softened
    • Gala apples – 3, peeled, cored, cut into 8 wedges
    • Brown sugar – ¾ cup, packed
    • Lemon juice – 1 tbsp, freshly squeezed
    • All purpose flour – 1 ½ cup, leveled
    • Baking powder – 2 tsp
    • Salt – ½ tsp
    • Cinnamon – ½ tsp, freshly ground
    • Granulated sugar – ½ cup, powdered
    • Eggs – 3, medium
    • Vanilla – 1 tsp
    • Milk – ½ cup
    Directions:
    1. Preheat the oven to 180 degree Celsius.
    2. Grease a 9 inch pan with 2 tbsp butter and sprinkle a little brown sugar. Keep aside.
    3. In a mixing bowl, add lemon juice and apples and toss to ensure even coating.
    4. Arrange the apples in the baking pan as 2 concentric circles.
    5. In a large mixing bowl, add sieved flour with baking powder, cinnamon, and salt. Keep aside.
    6. Using a hand mixer, beat the rest of the butter with powdered sugar until the mixture turns pale and fluffy.
    7. Crack in eggs, one at a time. Beat the eggs well after each addition.
    8. Mix in vanilla.
    9. Add flour and milk, alternately to the butter mixture, starting and ending with flour, beating well after each addition.
    10. Spoon the batter atop the apples, arranged in the pan. Using the backside of the spoon, even out the top.
    11. Bake in the preheated oven for 45 to 50 minutes or until a teaser inserted comes out clean.
    12. Remove from the oven and transfer to a wire rack.
    13. Wait for about 60 minutes.
    14. Run a serrated knife around the pan edges, loosen the edges, and invert onto a plate.
    15. Slice and serve with whipped cream or ice cream.
